We roast our beans in small batches to ensure that they are fresh and maintain their unique flavor profiles.
We roast our coffee just before shipping to preserve its unique flavors. Coffee reaches its peak taste within the first few weeks after roasting, but it might need a day or two to rest. Recently roasted coffee releases a lot of CO2, which can impart a bitter taste. We invite you to try the coffee each day and discover the evolution of flavors.
Store your coffee beans in an airtight container away from light, heat, and moisture. This will help preserve the freshness and flavor of your coffee.
Grind your beans just before brewing to ensure maximum freshness and flavor.
Experiment with different brewing methods to find your preferred taste and aroma. You can try methods like French press, pour-over, or espresso.
Consider the roast level of your coffee and the recommended brewing method. For example, darker roasts are typically better suited for espresso while lighter roasts are better suited for pour-over or drip brewing.
Coffee is an exceptionally sensitive plant, vulnerable to both infections and pesticides. It typically takes about five years to produce its first fruits, and yet it can live for a century or more. We oppose certain organic certification standards because they compel farmers to uproot older, well-established coffee plants and replace them with “organically certified” seeds, effectively banning the replanting of endemic varieties.
This requirement creates significant problems. Newly certified plants often lack the natural resilience of local strains, which forces farmers to rely more heavily on pesticides and fertilizers. Contrary to popular belief, organic certification does not necessarily prohibit the use of chemicals; it simply limits usage to those on an approved list—often tied to paid certifications and not always the most natural or effective options. In some cases, these guidelines even restrict traditional, time-tested farming methods.
We choose instead to support farmers who cultivate endemic coffee varieties that are already adapted to local conditions. These plants demonstrate robust resistance to pests and diseases, allowing growers to rely on purely natural techniques and ensure a healthier, more sustainable crop.
